Cashew Butter Protein Krispies


After demoing my Nutella Protein Krispie recipe at Bodypower Expo a few weeks ago, I felt inspired to get creative & see how I could adapt the recipe to create a sweeter "blondie" version & here it is.

This is definitely one for those who like things super sweet! They're SO easy to make & contain only 5 ingredients too (the hardest part is not eating them all in one go!).

Servings: Makes 9

Macros per serving: 132kcal / 5.5g protein, 14g carbs, 6g fat

Ingredients:

100g cashew butter

75g dates (soaked in boiling water for 10-15 minutes)

30g vanilla whey (I use Quest vanilla whey in these as it's very sweet - you can always add 1tsp stevia if needed).

35g puffed rice (I use one by Kallo)

30g mini marshmallows

Instructions:

1. Remove dates from boiling water & blend into "paste".

2. Melt cashew butter in pan or microwave.

3. Stir in protein powder, rice puffs & dates.

4. Scoop mix out into cake cases, sprinkle on marshmallows & leave to set in fridge for at least 15-20 minutes.

5. Eat! :-)
