Lotus Biscoff Rocky Road

It's been so long since I last uploaded a recipe (over a year in fact!) but I'm back & I thought I'd branch out & create something a little more calorific for those who fancy a little more indulgence. This recipe takes minutes to make & is so tasty!

WARNING: You may be tempted to eat all of the batter before it even sets it's so good ๐Ÿ˜‰.

Ingredients: โ €โ €โ €โ €โ €โ €โ €โ €โ € 300g white chocolate โ €โ €โ €โ €โ €โ €โ €โ €โ € 125g biscoff spread โ €โ €โ €โ €โ €โ €โ €โ €โ € 50g unsalted butter โ €โ €โ €โ €โ €โ €โ €โ €โ € 200g crushed biscoff biscuits โ €โ €โ €โ €โ €โ €โ €โ €โ € 100g mini marshmallows โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € Method: 1. Melt together butter, biscoff & white chocolate in microwave - (do it in 30 second blasts & keep stirring so it doesnโ€™t burn). โ €โ €โ €โ €โ €โ €โ €โ €โ € โ €โ €โ €โ €โ €โ €โ €โ €โ € 2. Once melted stir in marshmallows & crushed biscuits & press down well into a lined 7x7 baking tin. โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ €โ € 3. Place in fridge to set for at least one hour. Optional - pour over more melted biscoff spread after 15 mins of cooling to decorate.
