Lemon Meringue Protein Balls


More balls! This time in another fab flavour - lemon meringue pie. With less than 90 calories & over 5g of protein per ball, these make a great little on the go snack.

Makes 10 balls

Macros per ball:

84kcal / 5.5g protein / 6g carbs / 4g fat / 0.5g fibre

Ingredients:

85g cashews

30g oats (regular or gluten free)

40g vanilla whey protein

25g honey or agave

1tsp lemon extract

2tbsp water

Instructions:

1. Blend all ingredients in food processor (if mix does not stick together add a tiny bit more water)

2. Roll into balls

3. Leave in fridge for 30mins to firm up

4. Eat!
