Gingerbread Protein Balls


I love gingerbread men but they're not always that diet friendly. This christmassy protein ball flavour is a healthy (vegan & gluten free!) alternative to keep your diet on track throughout the festive season.

Servings - makes 10 balls

Macros per ball:

72kcal / 4.5g protein / 9g carbs / 2.8g fat / 1g fibre

Ingredients:

80g dates (stoned)

40g vanilla protein powder

30g oats (regular or gluten free)

25g almonds

10g honey or agave

3/4tsp ginger

1/2tsp nutmeg

Instructions:

1. Soak dates in a bowl of boiling water for 10-15 minutes (or until soft & gooey).

2. Add all ingredients into food processor/blender (including 2tbsp of water from dates).

3. Blend until mix sticks together, scoop out & roll into balls.

4. Eat! :-)
