Blueberry Pie Protein Balls


Happy New Year! Get your blueberry pie fix with these delicious blueberry pie protein balls. Made from delicious dried blueberries & cashews, these balls are not only gluten free but they're also vegan too!

Serving - makes 10 balls

Macros per ball:

80kcal / 5g protein / 9.4g carbs / 2.7g fat / 1g fibre

Ingredients:

50g cashews

50g dried blueberries (I got mine from Asda)

40g vanilla protein powder

30g oats (regular or gluten free)

20g honey or agave

1/2 tsp vanilla extract

Instructions:

1. Soak blueberries in bowl of boiling water for 10-15 minutes (or until plump, sticky & juicy).

2. Place all ingredients in food processor/blender & add 2 tbsp of the water from the blueberries.

3. Blend until mix sticks together, scoop out & roll into balls.

4. Eat! :-)
