Pineapple & Coconut Protein Balls


With all the miserable cold weather at the moment I thought i'd bring back a little touch of summer with this week's protein ball flavour! They're under 100 calories, vegan & gluten free too!

Servings: Makes 10 balls

Macros per ball:

92kcal / 5g protein / 9g carbs / 4g fat / 1g fibre

Ingredients:

30g oats (regular or gluten free)

40g vanilla protein powder

50g dried pineapple

60g cashew butter

15g honey or agave

10g dessicated coconut

Instructions:

1. Soak dried pineapple in a little bit of boiling water (just enough to cover it) for 10-15 mins (or until sticky).

2. Remove pineapple from water & add to blender/food processor. Add all other ingredients except for the dessicated coconut & blend until mix sticks together (if mix looks a bit dry add 1-2tsp water or pineapple juice). You want the mix to be quite sticky so that the coconut sticks to it.

3. Scoop mix out using a spoon & roll into balls - roll each ball in the dessicated coconut until coated.

4. Eat! :-)
