Raspberry-Chocolate Pancake Stack


A slight adaptation on my 3 choc-banana pancake recipe - raspberry chocolate!

At only 270 calories for the whole stack (including the coconut oil to cook them in!) & with 30g protein, they're a great way to satisfy your sweet tooth without blowing your diet!

Serving Size: Makes 1 stack

Macros Per Serving:

268kcal / 30g protein / 25g carbs / 6g fat / 5g fibre

Ingredients:

75g banana

20g chocolate protein powder

110g egg whites

50g raspberries

10g Choc Shot (available in hot chocolate aisle of supermarket)

1/2 tsp baking powder

Instructions:

1. In a blender mix egg whites, banana, 15g of the raspberries, protein powder & baking powder (if you don't have a blender you can still make these the mix just won't be as "fluffy").

2. Preheat 1/2 tsp oil of choice in a non stick pan on medium heat (I find coconut oil works best for pancakes)- pour in pancake mix. I split mine into 5 equally sized pancakes to make a stack but you can make one large pancake if you prefer.

3. When the bottom of the pancakes are firm, flip & cook the other side until completely cooked through.

4. Remove from pan & serve with raspberries & Choc Shot.

Tip: For perfect pancakes make sure the heat is not too high - this will stop the pancake sticking or burning on the outside before the middle is cooked through. You'll know when it's time to flip the pancake when you wobble the pan & the mix looks stable & "jelly like" i.e. no longer really runny on top.
