Jammie Dodger Protein Balls


Jammie Dodgers have to be one of my favourite ever biscuits. After chatting with a friend that can't have gluten I thought i'd find a way of creating a version that they can enjoy too!

Servings: Makes 8 Balls

Macros per ball:

78kcal / 5g protein / 9g carbs / 2g fat

Ingredients:

40g vanilla protein powder

40g honey or agave

30g oats (regular or gluten free)

30g cashew butter

30g raspberry or strawberry jam (I used raspberry as I find it tastes more like the jam in actual Jammie Dodgers)

2-4tbsp water

Instructions:

1. Place protein powder, oats, honey, cashew butter, water & HALF of the jam into blender/food processor (you may wish to pop the cashew butter in the microwave for 20 secs to soften first for better results). Blend until mix is thick & stuck together. If mix looks a bit dry add more water but BE CAREFUL you don't add too much.

2. Scoop out mix using a spoon & roll into 8 even sized balls.

3. Make a hole (or heart shape if you have time!) & fill each one with the remaining jam.

4. Eat! :-)
