Skinny blueberry muffin for one? Go on then.
This whole big bowl full of warm blueberry goodness contains only 364 calories - that's the same as one regular sized skinny muffin from Starbucks. However, unlike the Starbucks version this one contains a decent 37g protein serving.

364kcal / 37g protein / 34g carbs / 9g fat / 6g fibre
Ingredients:
15g coconut flour
30g vanilla protein powder
50g egg whites
1 whole egg
50g milk of choice (I used Alpo coconut milk)
1/2 tsp baking powder
1/2 tsp vanilla extract
30g fresh blueberries
Instructions:
1. Preheat oven to 180c.
2. Place all ingredients except blueberries in a blender & mix well.
3. Stir in blueberries & pour into oven proof dish.
4. Bake for 20 minutes.
5. Eat! :-)
